It was a biological trait that many species shared; an immune system response to pheromones. The olfactory systems in both Vulcans and Humans will shut down upon meeting their soulmate, until they have their first kiss.
Jim hasn't been able to smell a thing since he laid eyes on Spock, which is why it hurts so much when the Vulcan clearly doesn't reciprocate his feelings. Nobody could love a broken man anyway. Destiny must have made a mistake. Spock- who's been using nasal suppressants since joining Starfleet (and is deeply in love with his Captain) is in for a real shock when a transporter malfunction renders him human for a day.
