Noe has a sweet tooth-- more specifically, he has a sweet tooth for the delicious baked goods that Vanitas makes. Actually, it doesn't even have to be sweet; it just has to be made by Vanitas.
Vanitas, despite his efforts to portray himself to the contrary, enjoys baking for Noe. Perhaps a little too much, seeing that his baking habits (and Noe's eating habits) are beginning to have an effect on Noe's waistline.
Noe, naturally, hardly seems to notice at first. Vanitas does, but Noe is a grown adult, and if he wants to fill out that cafe uniform and then eat his way out of all his clothes, well, who is Vanitas to stop him?

Except death seemed reluctant to keep Vanitas, and so he was returned, with a year's worth of memory completely lost from his mind.

One time, the man plopped something on the conveyor belt Noé didn’t even know the store sold. He rung him up, as usual, and never got the chance to ask - the man left as quickly as he had come. Noé desperately wished to have a name to connect the man with, but every time he got close to asking, the guy had gone.

Noé swallows around the lump in his throat. “Why are you here?” He forces himself up and onto his feet. His legs are shaking, and every twitch sends throbbing pain rattling through thin joints.
He props one hand against the wall to support himself as he gets up. The chain of the collar clanks at the motion. Noé holds the metre or so of the slack chain dangling from his throat in a white-knuckled grip. The motion of standing leaves his chest cramp, his lungs breathless. Hunger rears its beastly head in his gut.
“I want to know Lord Ruthven’s secrets,” purrs Vanitas. He doesn’t move from his position from the floor, and doesn’t look the least bit intimidated by Noé. “And why it is that he’s keeping a vampire pet in his basement.”
